RECIPE: S’mores Bars!
This is a great recipe for those chilly days when a campfire would be the perfect relief. Bring back those camping memories or create some of your own with this yummy, gooey snack, sure to please every sweet-tooth you know!
INGREDIENTS:
- 2 1/4 c graham cracker crumbs
- 2 3/4 c granulated sugar
- 2 T packed light brown sugar
- 1 1/2 sticks margarine, melted
- 2 sticks + 2 T margarine, cut into small pieces
- 6 oz unsweetened chocolate, chopped
- 5 large eggs, beaten
- 1 3/4 c flour
- 1 1/2 t vanilla
- 1 c pecan halves, chopped and toasted, if desired
- 4 c packed mini marshmallows
Grease the bottom of a 15×10 pan. Line the bottom and sides with parchment paper and then grease the paper. Set aside. Preheat the oven to 350. Prepare the crust as follows: mix the graham cracker crumbs, brown sugar and 1/4 c granulated sugar together in a small bowl. Add the melted butter and mix until well combined. Press mixture into a thin, even layer in the bottom of the baking pan. Level with a measuring cup or another flat object. Prepare the fudge brownie filling as follows: combine the chocolate and butter in a large bowl and microwave in 45 second increments, stirring each time, until the butter and chocolate are completely melted. Whisk the sugar into the butter mixture, then follow with the beaten eggs. Stir in the flour until just combined. Add vanilla. Pour batter on top of the crust and level. Next, top with the chopped nuts and bake about 35 minutes. Layer the marshmallows on top and bake another 10 minutes or until the marshmallows are puffy and golden brown. Cool completely in the pan. Cut into 2 x 2 inch squares and remove from pan. These may be kept in an airtight container for up to a week.
