How To Celebrate Father’s Day

Father’s Day is this coming Sunday. I cannot believe an entire year has gone by since last year’s extravaganzas! This year, the little ones and I have planned a simple Sunday Brunch with the family (to start) and an afternoon BBQ at the local regional park.

Our father is diabetic, so we always like to cook extra food items that he can enjoy. For Father’s Day, however, we like to make all of the menu selections healthy and/or Sugar-Free. It’s so great to see how much more Sugar-Free selection there is these days. Did you know that Nabisco now offers Sugar-Free Oreos? How delightful is that! Oh, we are definitely adding those to the dessert table. That table will feature those magical Oreos along with a display of cut fruit fit for a king!

Allow me to share a Sugar-Free Pancake recipe that we frequently use at home:

1 1/4 to 1 1/2 cups flour
2 teaspoons baking powder
2 tablespoons Splenda sweetener (or your favorite sugar alternative)
3/4 teaspoon salt
1 teaspoon cinnamon powder (side note: cinnamon helps control blood sugar a bit :-) )
1 1/2 cups milk
1 egg
2 - 3 tablespoons oil

1. Mix the dry ingredients together, then add the milk, oil and eggs. Mix well and try to get some of the lumps out of the batter.

2. Heat a skillet on medium heat. When heated, scoop the pancake batter recipe into the frying pan with a large spoon to make individual pancakes. Cook on one side until the top begins to bubble, then flip over and cook on the other side.

3. The number of pancakes it makes depends on how large you make them, but the recipe serves 2 to 3 people, so double or triple as necessary!

4. Serve on your favorite solid colored paper dinner plates for a splash of color.

If you have little ones, let them help you make the pancakes into fun shapes with cookie cutters or a butter knife (with supervision). I thought tie shaped pancakes would be so cute!

As far as beverages go, Orange Juice Popsicles for the kids and Mimosas for the adults sound perfect. Just make sure and display them over ice so they don’t melt too quickly. Tailor your Sunday Brunch for your special guest this weekend.
