How To Stay Cool For The Summer

Summer is here!! I hope you’re just as excited as I am. This is my favorite season — are you kidding me? Pool parties, summer cocktails, weekend trips, beach days, the adventures are endless. I know it’s not the same as when we were children and we had those three months of vacation to which to look forward, but summer is still such a happy season. I have the best memories of camping trips and family vacations.

Although summer is my favorite season and I love warm weather, there are still those super hot days when you don’t feel like cooking. Who wants to slave over a hot stove in sticky weather? This is the best time to whip up some cool snacks and/or meals and take them to the beach or the park for a picnic. My favorite go-to salad so far is a Strawberry Poppyseed salad from a local cafe, but I put together one of my own that is just as good! (promise):

Ingredients:
Spinach Leaves
Walnuts or Sliced Almonds
1/4 cup chopped strawberries
1 tablespoon dried cranberries
Raspberry Vinaigrette Dressing or Poppyseed Dressing

Directions:
Mix them all together in a plastic bowl and enjoy with a piece of french bread!
