It always feels like summer vacation is way shorter than it actually is. Because of that, I think it’s important to enjoy every day. I’ve been a bit obsessed with pineapple lately-pineapple smoothies, pineapple bread, pineapple juice, pineapple ice cream, you name it.
I was trolling the internet a few weeks ago and I came across this original ladybehindthecurtain.com cupcake recipe and it was a dream! Upside Down Pineapple Cupcakes (see below)?! I tried them at home and they’re just as yummy as they sound. Garnish them with even more pineapple and decorate them with Luau Parasol Picks for a festive touch!

Summer Pineapple Cupcakes

A delicious "upside down" pineapple cupcake recipe.
Ingredients
- 1.5 cups All Purpose Flour optional: sub whole wheat all purpose flour
- 1.5 teaspoons Baking Powder
- 1/4 teaspoon Salt
- 1 cup Butter softened
- 1 cup Granulated Sugar
- 1 teaspoon Vanilla Extract
- 3 Eggs
- 1/4 cup Milk
- 18 Maraschino Cherries optional
- 20 Ounce Can Pineapple Chunks each chunk will be cut in half
- Pineapple Rings optional for garnish. cut into wedges
Instructions
- Preheat oven to 350 degrees. Line cupcake tin with 18 cupcake liners and set aside.
- In a medium bowl, combine the flour, baking powder and salt. Beat together the butter and sugar until fluffy. Add the vanilla and eggs one at a time until well combined. Add the flour mixture alternating with the milk. Mix until combined.
- For each cupcake: Once the mixture is ready, place a teaspoon of batter in each cupcake liner & place a maraschino cherry on top. Then, add one tablespoon of batter (wet fingers and spread if necessary as batter is significantly thick) on top. Next, add 3-4 chunks of pineapple. Last, add one more tablespoon of batter on top.
- Once all cupcakes have been layered as instructed above, place the tin in the oven for 20-23 minutes. Allow the cupcakes to cool and frost with a vanilla or pineapple flavored frosting. Garnish your delicious treats with pineapple rings and festive luau parasol picks, like the dessert above.
